FABIAN SALAD: A genuine Nabueno recipe.
My Mom remembers my Lolo used to serve them this salad when she and her siblings were still small, with all the ingredients freshly picked and caught from Ibaba (the farm behind San Isidro). I never heard of this salad before and never seen anybody made it. I asked my Mother what it is called but she doesn’t remember that it actually has a name, but instead she can only describe it. So I took the liberty to name this salad as Fabian Salad to pay homage to my late Lolo Fabian’s humble culinary ingenuity. The endemic ingredients make this salad truly a Nabueno’s cuisine. So here it is:
INGREDIENTS: -Iniyow na atas (flaked) -Lumbod na dawon sa pansaw -Kamatis -Sibulyas -Suka (optional) -Patis (optional) PROCEDURE: -Cut pansaw leaves into very thin strips. (OPTIONAL: you may blanch the Leaves) -Then add flaked iniyow na atas. -Then add sliced kamatis and sibulyas. -Then tossed. OPTIONAL: - You may drizzle it with a mixed suka and patis.

unga ko sana, uno sa tagalog a pansaw? o sa english kaya? Nag-anap kaya ako kan sa manila kadto di nira yan isi. dawa ngani sa albay, di an pigkakaon.
I agree that this is very delicious even without the atas. Tilapia pwede man. but you have to admit that this is an acquired taste as the pansaw has a peculiar smell and taste. kagan bulong.
